Semolina and yogurt lemon-syrup cakes

I’m being very generous sharing this divine recipe with you, I do promise that if you take these buttery moist lemon cakes to work for morning tea or a friends for afternoon tea that you will have both requests for the recipe and to cook them again in the future. These are indeed gorgeous and if you delight in sharing your baking with friends, as I do, then you will very much enjoy baking this recipe. I’d make this recipe from time to time when I owned “My Little Cafe” and it was always very popular and I often had requests to make it.


  • 250g unsalted butter
  • 1 tbsp grated lemon zest
  • 1 cup caster sugar
  • 3 eggs separated
  • 1 cup SR flour
  • 1 cup semolina
  • 1 cup yogurt

Lemon Syrup

  • 1 cup caster sugar
  • 1/3 cup lemon juice
  • (I also add some thinly sliced lemon rind)


  1. Preheat oven to 160c fan forced
  2. Separate the eggs
  3. Cream the zest, butter and sugar until light and fluffy
  4. Beat in the yolks
  5. Transfer to large bowl and shift in flour, add semolina and yogurt and lightly stir together
  6. Whip egg whites until stiff and fold through mix in two batches
  7. Spoon into cases or a cake tin
  8. Bake small cakes for about 20mins and large whole cake for 45 mins
  9. Prepare syrup by bring all ingredients to the boil without stirring
  10. Stab the warm cakes a few times and drizzle with the lemon syrup

The Verdict

These divine little cakes are so pretty with the sticky shiny syrup glazing the golden hue of the freshly baked treat. The texture is so moist and buttery however is cut nicely by the sweet lemon syrup. I do recommend adding some thin strips of rind to the syrup as it looks so pretty and adds a little bite of bitterness which is rather nice with the richness of the cake. Add a dollop of thick Greek yogurt, cream or mascapone and you have a very indulgent afternoon tea….and of course you deserve it! Enjoy.
