Pork and Apple Triangles: A puffed pastry triangle filled with warm roast pork, apples, onion and fruit chutney. These are a family favourite on boxing day and this year having Christmas away my parents, I wasn’t going to miss out and made my own. Many years of hanging around the kitchen as a child has paid off, I was about to recreate these simple little treasurers with no trouble at all. I love that I just shared them with my partner, step daughter and niece and they have just told me they are delicious.
They are so simple and quick and was seriously tasty and moreish.
Cold leftover roast pork, cut into small cubes
Onion, finely chopped
Green apple, finely chopped
Fruit chutney to moisten the mixture
4 sheets bought puff pastry
Mix all together in a bowl
Cut puff pastry sheet into 4 squares and add a spoon of the pork mixture
Fold the square in half to form a triangle and then press to seal
Repeat with all the filling until done, it makes approx 16 triangles
Brush with egg wash and bake in a moderate oven until puffed and brown
Warning: they are really hot inside
I ate 4 of them, for some reason I can eat twice as many of these as I would in a normal meal! Maybe as they only happen once a year. I hope you all had a fantastic Christmas filled with wonderful family and food.
