Afternoon tea with Lemon Friands

IMG_20130302_145449Afternoon tea with Mum and Danielle. What a lovely way to spend the afternoon, enjoying the good company and conversation of these two wonderful women. I love hosting afternoon tea parties, any excuse to put out the mismatched tea set and bake for friends. I’ve been keeping an eye out for lovely vintage tea cup, saucer and plate sets in the local op shops. I’ve managed to find five so far, my newest one has beautiful yellow flowers and the gold rim is in perfect condition. As it turns out Danielle has been collecting tea sets also and has found some great pieces on ebay, I really don’t need any further encouragement!

I baked lemon friands, these sweet buttery little joys were always popular in my cafe and are so quick to make. They present really nicely on a white platter dusted with icing sugar. Here is the recipe:

  • 190g unsalted butter (melted)
  • 60g plain flour
  • 1 1/3 cups icing sugar
  • 120g almond meal
  • 5 egg whites
  • Grated zest 1 lemon

Method

1. Preheat oven to 180c and grease the friand pan

2. Sift sugar and flour and stir in meal (dry ingredients)

3. Froth eggwhites in small bowl lightly

4. Add butter and eggwhites (wet) to dry

5. Add to friand pan and bake 30 mins

Enjoy!

Follow with a couple of glasses of bubbles and you have the recipe for a relaxing afternoon.
